Truth is, I hate thinning vegetable seedlings so I use them in the kitchen as much as possible and throw what’s left on the compost heap.

This carrot top pesto recipe is an amazing way to use up those carrot tops and I even use the entire plant when the carrots are too small to use seperately.

This carrot top pesto recipe is so easy that you can make it in as little as 10 minutes. We love it added to pasta, spread on pizza bases and with cheese on toasties.

Carrot Top Pesto Recipe

For this recipe you’ll want to select carrot tops that are young and fresh. You can discard the thicket stems but if using thinnings then use the entire plant.

Ingredients

  • Big bunch of carrots tops *or entire plant if using thinnings)
  • 1 garlic clove
  • Small handful of basil leaves
  • 50g hazelnuts or other nuts
  • About 100ml of olive oil
  • salt and pepper to taste
  • Splash of lemon juice

Method

  • Wash carrots well (collect waste water for garden).
  • Blitz ingredients together. If you add oil gradually then you can get a consistency you’re happy with.
  • Season to taste.

Stir your carrot top pesto recipe into pasta, spread on pitta bread, dip in crisps or add a dollop to your pizza.
